BELFAST MAPLE FARM, A FAMILY BUSINESS
Érablière Belfast, founded in 2021, is the maple products transformation division of the family maple farm located in Saint-Patrice-de-Beaurivage, in the county of Lotbinière. In fact, the company is named after the road on which the sugar shack is located.
WHY DID WE LAUNCH BELFAST MAPLE FARM?
In addition to producing the maple syrup with our father and our trusted sugar master, Yan, we (Mariane and Laurie) wanted to create something special with our maple syrup. We aimed to make new products that would elevate maple by giving it a modern twist.
The inspiration for our first innovation came during the many hours spent by the evaporator, eagerly awaiting the next batch of maple syrup, while enjoying more cups of réduit than we probably should have. For those who are not familiar, réduit is the maple water that’s been boiling in the evaporator but hasn’t turned into actual syrup yet. It’s so good that we had to make it available for as many people as possible.
After some brainstorming, we realized the simplest way to make réduit available to everyone was by turning it into tea bags: mess-free, nonperishable, and easy to take with you wherever you go. Just add one tea bag packed with maple goodness to a cup of hot water (and a touch of boreal-flavoured gin, in keeping with the sugar-shack tradition), and you’re all set! That’s how Ponce D’Hiver was born.
And don’t worry, we’re still hard at work developing new products to make other maple classics even more accessible to everyone!
OUR MISSION
We’re truly passionate about the forest, particularly when sugaring-off season rolls around, and we aim to spread that love through our products. Our goal is to share the joyful sugar-shack experience with everyone because it’s all about family; bringing people together; and, of course, enjoying the sweet taste of maple!
OUR SWEET PRODUCTS
Our products are handmade in small batches to ensure the highest quality. Our selection of fine products includes outstanding amber maple syrup, smooth and deliciously creamy maple butter, and a heartwarming maple infusion to enjoy after a long day outdoors.
